Ya know one of the best things about raw food? It takes a fraction of the time to prepare when you are hungry. That was the case tonight with me. I couldn't fill the blender fast enough with the ingredients for this soup. This is one of my favorite raw soups that I make. Very good and filling. So here's the recipe so you can try it for yourself.
Raw Fiesta Soup
2 medium tomatoes
1 large red bell pepper
1/2 small avocado
2-3 cups baby greens
Squeeze of lime
Celtic sea salt, dulse or kelp to taste
Handful of cilantro
1 scallions/green onions (as a garnish on top)
Instructions:
Place tomatoes, chopped, red bell pepper, avocado, greens, lime, salt/sea vegetables in the blender and blend until smooth. Add cilantro and pulse briefly. Adjust seasonings and garnish with chopped scallion.
